Conveniently located in the Omni Hotel in Providence on the 2nd floor, Centro offers 3 hours free parking in the Convention Center parking garage during dinner hours, as well as valet parking for your convenience. Centro is open every day for breakfast from 6:30am until 11:30am, lunch from 11:30am until 2:30pm, full lunch menu in the bar and lounge from 2:30pm to 5pm, and dinner from 5pm until 11pm. I spent three years as executive chef at the Rhumbline restaurant, a quaint setting in a historic colonial house in Newport’s Point section, where I served nostalgic dishes with a contemporary twist.
A three year stint as executive sous chef at the Clarke Cooke House in Newport allowed me to create dishes using some of the freshest foods available, including fruits, vegetables & meats from the company’s own farm in nearby Portsmouth, while incorporating a healthy style of ‘clean’ presentations with seasoned and infused oils, syrups, vegetable juices and fresh herbs.
Since arriving at the stoves of the private Agawam Hunt Club in the winter of 1995, my goal had always been to continue to develop & maintain the high quality dining experience that the members enjoy & to serve food as beautiful as the wonderful surroundings there.
While at The Agawam, I was personally invited to Chicago by the late Charlie Trotter to observe & work with him at his four star, Relais & Chateaux recognized restaurant ‘Charlie Trotters’. I learned a great deal working at the side of the multiple James Beard Award winner. Chef Trotter was not only very serious about food, but had an extensive wine program as well. This turned out to be one of the highlights of my culinary career. Another was being selected to study & cook with renowned chef/educator Madeleine Kamman during an intense, week-long food/wine pairing course (her last), which culminated with a Bastile Day dinner in her honor.
I recently spent two years in sunny LA as executive chef at the prestigious Wilshire Country Club, while it was great fun meeting & cooking for the many celebrity members & guests there, family & the home which I still own here in RI were calling me back in this direction.
I have one child, Brian, who attended UConn & loves his career as an EMT/paramedic & correctional officer in Connecticut. In my down time I enjoy brewing homemade beer & I grow a small organic garden each year.
